Chapter 59 - Making Mooncakes (1)

Cheng Huan pushed the filled-to-the-brim shopping cart and went home with XingXing before she made a second trip back to return the cart after she had unloaded everything. 

When she returned home, XingXing had already unwrapped the doll. Carrying the doll in both hands, he put it at the front of his bed and talked to it. 

“Be good, okay? No running around.”

Cheng Huan chuckled by the door. She walked inside, took a look at the doll that was placed properly on top of the pillow, and asked XingXing, “If it’s sleeping there, where am I going to sleep?”

The bed that came with the apartment was quite big, about 1.8 meters. There were two pillows on top of it, one for each of them. XingXing placed the doll on Cheng Huan’s pillow and also pushed the pillow into the middle of the bed.

“We’ll let it sleep here for a bit,” said the little kiddo ruthlessly. He patted on the mattress and said, “We’ll kick it off when mommy goes to bed.”

Cheng Huan: “……” That’s kind of ruthless?

XingXing didn’t know that his mother had just labeled him as a douchebag in her mind. After he had decided on the fate of the doll, he picked up Cheng Huan’s hand again and said, “Let’s go make mooncakes, Mom.”

Cheng Huan felt bad for the doll for a second. She looked at the time and discussed with XingXing, “How about we have lunch first? We will make mooncakes after lunch?”

“Okay!”

They had breakfast quite late, so Cheng Huan was not hungry yet. She made a one-person portion of a kid's meal for XingXing. 

XingXing couldn’t stop thinking about the mooncakes and wouldn’t focus on eating his lunch. When he finally shoved the last bite into his mouth, he hopped off his chair and said, “Mommy, I am done.”

“Finish the food in your mouth before you talk,” said Cheng Huan as she smiled and poked at the kiddo’s puffed up cheeks. 

Cheng Huan cleaned the table while XingXing finished up chewing. After Cheng Huan had everything put away, she took out some flour and sprinkled a little bit of them on top of the table that she had wiped clean and started working on the dough.

Mooncakes with meat stuffing required two types of wrappings – a dried layer and a moist layer. 

The making of the dried layer required no water. It required mixing all-purpose flour with a little bit of lard. The lard would be rubbed using one’s wrist then the lard and flour would be mixed with the heat from one’s palm before they were rolled into balls. 

After the dried layer was done, Cheng Huan moved onto the moist layer. She first made a circle on the table with the flour, cleared out the center, added some lard chunks, then added in hot water. She then rolled and shaped them with her hands before putting plastic wrap over them and letting it sit for 15 minutes. 

While it was sitting, Cheng Huan started on the stuffing. She had gotten some pork hind legs, 70% lean. She minced the meat and mixed it with salt, sugar, soy sauce, black pepper, and sesame oil. Water boiled with green onion and ginger was added while stirring during the process in order to get rid of the pork smell. 

Once all the water had been absorbed, the stuffing would need to be pounded to increase its sponginess. Grabbing the stuffing with both hands, Cheng Huan repeatedly slammed it onto the table. XingXing got curious and asked to try it himself.

“Okay, you try.” They were making these for themselves, so Cheng Huan wasn’t worried that the little kiddo would mess it up. She took him to wash his hands, let him stand on a stool, and gave him a small piece of the stuffing.

XingXing was young and weak and wasn’t able to slam the meat down very well. When Cheng Huan’s stuffing was already well combined, XingXing’s one was still separating and a lot of it was even stuck to the table. 

He picked up the loose pieces with his hand and took a look at Cheng Huan, who was already done with her share. He looked back at his share of the stuffing that was still in pieces and fretted a little. “Wait for me, Mom.”

“Mmm, no rush. Take your time.”
