Braised fish isn’t difficult to make. But it is easy to tear the fish skin and make it not look presentable.
The braised fish made my Tong Xuelu had intact skin. It’s meat was soft and smooth. It was savory and could melt in one’s mouth.
Mixing the rice with its sauce, one wouldn’t even need to have another dish.
The spicy chicken was numbing spicy and aromatic. This, too, isn’t a difficult dish to make but it is easy to overcook making the chicken dry. It is still good with rice but I isn’t as smooth and tender as stir fried or poached chicken.

Green onion, ginger, garlic, and hot pepper all infused the chicken perfectly. The more one chewed on it, the better the taste. It was certainly a crowd pleaser.
Half way through, Tong Xuelu walked over, “Comrade Pu, don’t forget to eat the chicken butt. I saved that for you specifically.”
